Hey guys! Sharing a very quick and simple (as all my recipes are) salad recipe! I discovered Israeli couscous a couple of months ago and I really like it! I get mine at Bulk Barn. I was just sick of eating the same things and looking for something different to try.
For this quick salad, I cooked the couscous as indicated. Once it was cooked and cooled, I added parsley, cucumbers, crumbled feta and the zest of 1 lemon. For the dressing, I used about 3 tbsp freshly squeezed lemon juice, 2 tbsp olive oil, 1/4 tsp garlic powder, salt & pepper.
That’s it! A great side dish. So light and fresh, perfect for Spring and Summer!
